Running a Scotch Whisky distillery is difficult enough without having to do it during a pandemic. I caught up with my boss, one of the founders of The Borders Distillery, John Fordyce, to ask him how the pandemic has effected craft distilleries.
The Borders Distillery is fairly new, having only started producing spirit starting in 2018. They actually have no Scotch Whisky to sell yet. Their spirit is still maturing in casks, and they must wait at least three years until the spirit can legally be called Scotch Whisky. As a start-up, with no Scotch Whisky of their own on the market yet, their position is especially precarious.
